I am lucky that in this phase of life I have a lot of friends having cute babies! I try out a lot of easy recipes so that I can take my friends food while they are recovering. I love this beef stroganoff recipe because it is easy to duplicate, tastes good, and microwaves as leftovers well the next day. Also, it totally reminds me of Sunday dinners at home with my Momma growing up! I was very happy to drop off containers of this beef stroganoff with some salad today at friends’ houses and see their brand new babies!

Ingredients
  1. 1 (8 ounce) package egg noodles
  2. 1 pound ground beef
  3. 1 (10.75 ounce) can fat free condensed cream of mushroom soup (see notes)
  4. 1 tablespoon garlic powder (see notes)
  5. 1/2 cup sour cream
  6. Salt and pepper to taste
Instructions
  1. Prepare the egg noodles according to the package.
  2. In a separate large skillet over medium heat, saute the ground beef over medium heat for 5 to 10 minutes, or until browned. Drain the fat and add the soup and garlic powder. Simmer for 10 minutes, stirring occasionally.
  3. Remove from heat and combine the meat mixture with the egg noodles. Add the sour cream, stirring well, and season with salt and pepper to taste.
Notes
  1. We have used ground turkey for this recipe to save money. We have also used half the amount of meat in the recipe before as well and it tastes just fine!
  2. I have been given a lot of feedback about the amount of garlic powder being too much. Yes, I used a whole tablespoon and this wasn't a typo; I enjoyed it and that is how it read from the original recipe as well. Use your cooking intuition if you feel that is too much for you and halve it, if necessary.
  3. If you feel the noodle mixture is dry, pour milk into the empty mushroom soup can and pour in the finished mixture to make it easier to stir.

  • This looks amazing! Definitely trying this recipe ASAP. I’m trying to go somewhat low carb for a few weeks, but definitely as a cheat meal, or after that!! <3

    • It is yummy, easy, and cheap!! Good luck on your carb restricting. It is soo hard, but it definitely has great results! I had a lot of success of weight watchers, but I always felt like I was starving. I want to try whole 30 at some point!!

    I added Pecorino Romano cheese, parsley flakes and a little paprika . I know those arnt normal stroganoff ingredients, however it may appease my picky eaters! First go they said it didn’t taste like anything. Crazies.

    Stroganoff is my husband’s favourite. But this had WAAAYY too much garlic. I hesitated putting a tablespoon in, but I did anyway. I probably should have only put in a teaspoon. We will be making something else to eat tonight. πŸ™

    I want to make this tonight but I don’t want to use the sour cream. Is there a way to either substitute it or not use it but not ruin the dinner?

    • I am not sure how it would taste without sour cream. Maybe you can use more cream or mushroom in it?

    Just made this tonight exactly as written. It’s not the right consistency for beef stroganoff. It needs more liquid and more spices.
